Nestled in the heart of London’s West End, you’ll find The Palomar.

Known for its open kitchen, electric atmosphere and deeply personal approach to hospitality, The Palomar has long been celebrated as one of the capital’s most exciting places to dine.

We are now seeking an exceptional General Manager to lead The Palomar. This is a rare opportunity to take the helm of an iconic restaurant and help shape its future, while honouring everything that has made it so loved.

Our intimate space is bursting with the vibrant colours, flavours, sounds and aromas of the rich cultures of Southern Spain and Italy, North Africa and the Levant. Whether in the midst of the action sat up at our kitchen counter, back in the elegant dining room or spilling out onto our street terrace, the atmosphere here remains at the forefront of our city’s dining scene.

As General Manager, you will be the centre of this experience: setting standards, nurturing talent and ensuring every service feels effortless, generous and memorable.

The role:

This is a hands-on, high-impact leadership position, ideal for someone who thrives in a busy, quality-led environment and takes pride in building strong, motivated teams.

You will be:

An inspiring leader who leads from the front, creating a culture that is inclusive, respectful and ambitious, where people feel supported to do their best work.
A natural host with a deep commitment to guest experience, confident on the floor and instinctive in building lasting relationships with regulars and new guests alike.
Commercially astute, with a strong understanding of budgets, forecasting and profitability, and the ability to balance creativity with rigour.
Highly organised and detail-driven, ensuring excellence across compliance, food safety, health & safety and licensing.
• Experienced and curious, with a proven track record at General Manager or senior management level in a high-quality, high-energy hospitality environment, and an eye on the evolving London dining scene.
