Lyle's are seeking a Head of Wine to join their team. The successful candidate will be friendly, personable and passionate about all things food and drink. This is a fantastic opportunity for an experienced Head of Wine looking for a new role in an award-winning, critically acclaimed group.

The Restaurant

Lyle’s is a British Restaurant with a daily changing menu and constantly evolving wine list. We opened in the Tea building in 2014 and won our first Michelin star just over a year later. We work with the best produce available, keep a small talented team and always aim to create a warm and welcoming atmosphere. We are a restaurant that is constantly looking to learn and improve whilst remaining excellent value for our guests. Lyle’s has featured in the top 10 of the UK Top 100 restaurants and the World’s 50 Best restaurants.

The Role

As Head of Wine, you'll manage and improve the wine program at Lyle’s providing a list that feels ‘destination’ but also offers value in the many different interpretations of that word. Increase wine sales through the provision of exceptional guest experience and expertise. Maintaining and improving the wine service by training staff and creating relationships with guests, suppliers and winemakers. Making sure there is a clear and thoughtful cellaring program for ageing wines. Bringing the perceived status of the wine list in line with the food at Lyle’s.

Some of the responsibilities:

  • Provide detailed descriptions of wine for training purposes – your descriptions will always strike balance between technical, personal and descriptive language.
  • Maintain and develop an excellent knowledge of wine, wine suppliers and attend wine tastings.
  • 4 services approx a week on the floor, normally in a wine-service capacity, but you should always hold a senior management position on the floor and provide support in whichever areas need it.
  • Liaise with the Head Chef and Front of House team to create wine suggestions that change as dynamically as the dinner menu does.
  • Deliver regular wine training which are relevant to the offering currently listed.
  • Maintain all wine lists so they are up to date and factually correct – digitally and physically.
  • Ensure wine cellar is always fully stocked and clean, checking vintages.
  • Managing of the cellar and aging of bottles. Create a timeline for rotating stock and drinking windows.
  • Carry out weekly wine stock-taking, ordering, purchasing, processing invoices and liaising with suppliers.
