From the founders of the Michelin-starred Sabor, Chef Nieves Barragán Mohacho, in partnership with JKS Restaurants, is seeking a passionate and talented Assistant Wine Manager to be part of Legado—a brand-new Spanish restaurant in Shoreditch.

The Restaurant

Legado, meaning ‘legacy’ in Spanish will showcase the depth and diversity of Spanish food. With over two decades of experience leading Spanish cuisine in London, Chef Nieves is bringing her vision to life at Legado, a celebration of Spain’s regional culinary heritage.

The Position

This is a full-time service-based management role. As Assistant Wine Manager you will be responsible for delivering the highest levels of service and an exceptional guest experience within the restaurant. You will help maintain the wine list, liaise with suppliers, and assist in training the team to deliver impeccable wine service and contribute to managing sections and opening/closing procedures as one of the management team.

Your role will blend expertise, enthusiasm, and a guest-centric approach to create memorable dining experiences while upholding the highest standards of quality and professionalism.

Responsibilities:

  • Assist in managing the service of wine and overseeing presentation standards
  • Confidently manage a section of the restaurant as an active member of the FOH management team
  • Deliver confident and professional communication with guests regarding wine selections
  • Work with the Wine Manager to maintain all wine lists so they are up to date and factually correct on vintages, prices and listings – digitally and physically
  • Deliver regular wine trainings which are relevant to the offering currently listed
  • Assiting in managing the wine cellar and all stock on-site
  • Management opening & closing procedures
  • Supporting in carrying out weekly wine stock-taking, ordering, purchasing and liaising with suppliers
  • Maintain and develop an excellent knowledge of wine, wine suppliers and attend wine tastings

The successful Assistant Wine Manager will have:

  • An engaging and personable nature
  • A passion for hospitality and delivering an exceptional guest experience
  • Prior experience as a Wine Manager or Head Sommelier within a quality restaurant
  • WSET Level 3 or equivalent Sommelier qualification (preferred)
  • A professional and confident communication style with fluent English language ability
  • Proven ability to lead, inspire and motivate a team
  • An excellent knowledge of food and beverage
  • The eagerness to continually learn and develop your career within hospitality
  • Good level of PC literacy (Microsoft Office)
