Deputy / Assistant Restaurant Manager

Location: Rockliffe Hall, Darlington

Salary: £35,500-£44,000 per annum

Hours: 45 hours per week

Reports To: Restaurant Manager, Food & Beverage Manager and Director of Food & Beverage

Responsible For: Supervisors, Bar Staff, Waiting Staff and Support Staff

Job Purpose:

The Deputy / Assistant Restaurant Manager plays a key leadership role within one of Rockliffe Hall’s signature dining venues, supporting the Restaurant Manager in the delivery of exceptional day-to-day restaurant operations. This is a hands-on, service‑led position, focused on maintaining five-star hospitality standards, supporting team performance, and ensuring consistently outstanding guest experiences across all service periods.

Working as a visible leader on the restaurant floor, this role supports operational excellence, service quality, and team engagement. The Deputy / Assistant Restaurant Manager will supervise service, uphold standards, and step into greater responsibility when required, making this an ideal opportunity for an emerging or established hospitality leader within a luxury environment.

Key Responsibilities of the Deputy / Assistant Restaurant Manager:

  • Support the Restaurant Manager in the effective daily operation of the restaurant across breakfast, lunch, and dinner service
  • Supervise service during designated shifts, ensuring smooth execution and consistent five-star standards
  • Assist with labour deployment and rota management, ensuring staffing levels align with business demands
  • Support front‑of‑house stock control, including ordering, rotation, and reporting discrepancies
  • Assist with financial procedures, including accurate billing, cash handling, and POS use
  • Monitor service quality and operational standards, escalating issues where appropriate
  • Work closely with kitchen teams to ensure timely, well-paced, and seamless food and beverage delivery
  • Step into increased leadership responsibility when required, supporting continuity of standards and service
  • Support the recruitment, induction, training, and ongoing development of front‑of‑house team members
  • Lead by example on the floor, coaching and motivating teams during service
  • Assist with performance conversations, feedback, and development discussions
  • Maintain a visible presence in the restaurant, engaging confidently with guests and resolving concerns proactively
  • Uphold brand standards across presentation, service etiquette, and guest interaction
  • Support menu launches, tastings, briefings, and service innovation initiatives
