Location: Rockliffe, Darlington
Salary: £40,829 per annum
Hours: Fulltime – 45 hours per week, including weekends
Reporting to: Head Chef and Senior Sous Chef
Responsible for: Chef de Partie, Commis Chef and Kitchen Porter
Job Purpose:
We’re looking for an experienced, Pastry Sous Chef to be responsible for the overall Pastry section in the Kitchens across the resort. Supporting the Head Chef and Senior Sous Chef in managing the kitchen operations.
Key responsibilities of the Pastry Sous Chef role:
- Creating new and exciting desserts to renew our menus and engage the interest of our guests
- Preparing a wide variety of goods such as cakes, pastries, bread etc. following traditional and modern recipes
- To support the Head Chef and Senior Sous Chef to achieve gross profit targets set within the kitchen, through stock takes, portion control, product costing and wastage measures
- Be able to liaise with recommended suppliers as required to ensure a good food product and price
- To create unique, rotating desserts using seasonal produce across the resort.
- Create specialty cakes for weddings, and other events
- Monitor the quality of goods delivered and ensure correct stock rotation is adhered to, and the correct procedures are followed
- If required, to attend internal Operations Meetings to discuss and plan the food requirements for upcoming meeting and events
- Be accountable for the food P & L profitability of the pastry section
- Ensure the safe running of all kitchen areas and that Health & Safety guidelines are adhered to, as per the hotel and company standards, always
- To employ food safety best practices and make sure that all Kitchen team members do the same
- Able to develop new menu ideas and implement them with descriptions, recipes and costings
- To actively participate in the development of menus.
- Deliver cook offs, training and information specification sheets for new menu items for the Kitchen and Front of House team
- Ensure all MEP for Afternoon Tea and all Menu MEP is always to a very high standard
- To decorating pastries using a variety of skills to ensure the presentation will always be consistent of a 5-star standard.
- Plan and place orders to selected food suppliers on a daily and weekly basis to ensure stock availability
- To maintain all equipment within the Kitchen through due care and diligence as instructed
- To be able to meet deadlines and work calmly under pressure and willingly undertake any tasks when requested by a Senior Management
- Responsible for ensuring the pastry section meets all regulations including sanitary and food safety guidelines
