Following a multi-million pound refurbishment, Dalhousie Castle is entering a landmark new chapter. This extensive investment has transformed the guest experience, introducing:

New and reimagined food and beverage experiences

At the heart of our culinary offering is the Fine Dining Dungeon Restaurant, one of the most distinctive dining venues in Scotland. Set within the castle’s historic vaulted chambers, the Dungeon provides an atmospheric and intimate setting for an exceptional fine dining experience.

The restaurant is currently on an exciting journey. The experience centres around a carefully curated eight-course tasting menu, inspired by the rich history of Dalhousie Castle and celebrating the finest seasonal Scottish produce and locally sourced ingredients. Each dish is thoughtfully designed to tell a story, combining creativity, precision, and modern culinary techniques.

We are currently recruiting a full time Fine Dining Waiter/ess to join the team supporting this exciting concept. This role will be primarily focused on the evening fine dining experience within the Dungeon restaurant, while also supporting other luxury experiences across the castle.

In addition to the tasting menu service, team members will also be involved in delivering our Luxury Castle Afternoon Tea, as well as supporting Private Dining experiences and intimate wedding celebrations held within the castle’s historic spaces.

As the Fine Dining Waitress within this environment, you will play a key role in delivering refined, attentive service that complements the culinary experience. You will help guide guests through their dining journey, demonstrating strong product knowledge and attention to detail while ensuring each guest enjoys a memorable and personalised experience.

We are seeking individuals with a genuine passion for hospitality, who take pride in delivering exceptional service and who thrive within a high-standard, detail-focused environment. A strong interest in fine dining, food and wine, and luxury guest experiences will be highly valued.

Previous experience within fine dining or luxury hospitality would be beneficial; however, we are equally open to individuals who demonstrate the enthusiasm, professionalism, and commitment required to grow within a high-level restaurant environment.
