Seeking a Sous Chef to move into a Chef Training & Assessing role!

Open Sunday to Friday (Thursday to 9.30pm)

We are looking for a Sous Chef who is passionate about food, who naturally shares their skill and knowledge with others and loves to showcase the latest technical skills.

The role is based within our award-winning training restaurant in HMP Brixton, and you will work closely with our Head Chef and management team to train our Prison Learners in cooking fine dining led food, run service and support our Learners in gaining their NVQ's in Professional Cookery, Food Hygiene and Food Service.

Our aim is to reduce re offending rates by providing Prison Learners with practical cookery skills to aid their rehabilitation. You will therefore support the Head Chef and Senior Sous Chef in the day-to-day operations of the kitchen and train the Learners who have 2 – 24 months left to serve of their sentence. Our students have the chance to gain City & Guilds NVQ qualifications in food preparation, professional cookery, food service and food hygiene, as well as gain experience whilst working in a fine dining restaurant which is open to the public. On release, we support our students in the wider community and lead them into employment within the UK hospitality industry.

Since opening, we have won several prestigious awards, including receiving a Princess Royal Training Award for ‘outstanding training and skills development’, the Observer Food Monthly’s ‘Best Ethical Restaurant’ and we are consistently in the top restaurants on Trip Advisor in London.
