About Us
The Clink Restaurant, based within the secure grounds of HMP Brixton, is no ordinary dining venue. Open to the public Tuesday to Sunday, we deliver award-winning Modern European cuisine while training Prison Learners towards nationally recognised qualifications in Professional Cookery, Food Service, and Food Hygiene.
Our mission is simple yet powerful: to reduce reoffending by equipping Learners with the skills, confidence, and experience to thrive in the hospitality industry after release.


The Role
We are seeking a Senior Sous Chef (or an ambitious Junior Sous Chef ready to step up) to join our passionate kitchen team. Reporting to the Head Chef, you'll play a pivotal role in the day-to-day running of the kitchen, delivering fine dining food while mentoring and training our Learners.


You will:
• Lead and support services in a professional, fast-paced kitchen environment.
• Share your knowledge and culinary techniques with Learners, supporting them in achieving City & Guilds NVQs.
• Bring seasonal, creative ideas to our quarterly changing menus.
• Support the Head Chef in ensuring operational excellence and food safety compliance.
• Be a role model – instilling professionalism, motivation, and pride in the Learners.


What We’re Looking For
• A qualified and experienced Senior or Junior Sous Chef with a flair for modern European cuisine.
• A natural mentor who enjoys teaching and empowering others.
• Someone with high culinary standards and a passion for training the next generation of chefs.
• Knowledge of food hygiene, allergen regulations, and kitchen management.
• A calm, confident communicator with a collaborative approach.
This role would suit a Junior Sous Chef looking to step up and make a difference.

Requirements
To apply, you must:
• Be eligible to work in the UK and provide original documentation/share code.
• Pass Ministry of Justice enhanced vetting and hold an Enhanced DBS.
