The Position
As Head Bartender, you will be leading on a very intimate drinks service of just 20 guest an evening. You will be a hands-on, proactive and enthusiastic when As Head Bartender, you’ll take the lead in delivering a highly personalised drinks experience for just 20 guests each evening—an intimate setting that allows you to truly showcase your craft. This is an exciting opportunity to be part of a brand-new project, where your creativity and vision will help shape the bar from the ground up.
Hands-on, driven, and full of personality, you’ll play a key role in evolving the beverage programme—developing innovative cocktails, curating a dynamic offering, and creating memorable moments that resonate with every guest. Working closely with the owners, you’ll have real influence over the direction and success of the bar, taking ownership of everything from cocktail development and stock management to maintaining the highest standards of service, operations, and health & safety.
This role offers a fantastic work-life balance, with a Tuesday to Saturday schedule, leaving Sundays and Mondays to recharge.
As Head Bartender you will be responsible for:
• Managing the Bar, lounge area and ensuring the running of a smooth service;
• Developing an all drinks program, including Digestif list, non-alcoholic, aperitif's etc.
• Welcoming and attending to guests with an exceptional level of care and service, ensuring that they leave with a positive and memorable experience;
• Inspiring, motivating and training waiting staff to deliver the highest levels of service;
• Carrying out all opening and closing procedures.
The successful Head Bartender will have:

Ambassadors Cubhouse are seeking a Chef Expeditor to join their team. The Chef Expeditor plays a key role in ensuring smooth communication between the kitchen team and the front-of-house team during service.
Positioned at the pass, this role supports the Chef team by helping manage ticket flow, coordinating dish dispatch, checking presentation, and ensuring food leaves the kitchen accurately and efficiently.
This is not a cooking-led chef role, but an operations and service coordination role that requires strong organisation, communication, and attention to detail.

Named after the Sethis’ maternal grandfather, a former Indian Ambassador, the restaurant will take inspiration from his summer house in Dalhousie (formerly part of Punjab) and North India’s abandoned party mansions, as well as the founders’ own Punjabi heritage.
The menu focuses on the cuisine of undivided Punjab. Culinary traditions and rare regional recipes will be showcased with a menu featuring classic papads, chaats & bitings, lesser-known kebabs cooked across the tandoor, sigri and tawa; curries cooked in cast-iron karahis and clay matkas, pilaus, biryanis, tandoor-roasted breads, and classic desserts.
An all-day drinks list brings guests through lunch to dinner to late-night party, with a focus on tequila and mezcal cocktails blended with regional produce. Highlights include a selection of ‘Punjabi Margaritas’ all made with exotic north Indian fruits and citrus and paired with chaat masala spiced salts. Encapsulating the traditions of Punjab where hospitality and generosity are celebrated through the sharing of fine liquor in abundance.

The menu focuses on the cuisine of undivided Punjab. Berenjak, the Iranian restaurant from Kian Samyani and JKS Restaurants, is to launch a new site in Borough Market this spring. It follows Berenjak’s first site, which opened in Soho in 2018 and was awarded a Michelin Bib Gourmand in 2019.
Berenjak Borough offers an expanded menu that includes several new homestyle Iranian dishes, alongside all the signature Berenjak classics. Just as the original Berenjak introduced diners to the flavours of Tehran’s hole-in-the-wall eateries, the new restaurant brings the classic charcoal-grilled kebabs, such as the minced lamb koodibeh and poussin jujeh tond, for which Berenjak is best known. Plaza Khao Gaeng is a celebration of Thailand’s coast-to-jungle cooking, serving Khao gaeng dishes, which translates broadly as “curry over rice”. A kaleidoscope of curries rich with fresh coconut milk, aromatic curry pastes, and fermented fish for depth, alongside searingly hot stir-fries lifted with cooling herbs - all designed to be mixed, matched and spooned over rice.
In Thailand, the most popular khao gaeng spots expand to fill whatever space they can. Plaza takes inspiration from one such restaurant in Bangkok, now spread through an old cinema - curries laid out in gleaming trays beneath a faded façade, climbing the stairs to the former box office. It’s anytime comfort food, offering pause and shade from the heat and noise of the street outside.
Our second Plaza Khao Gaeng opened in Borough Yards in November 2025, flanking the bustle of Borough Market, much as it would in Southern Thailand. Here, we take cues from electric markets, roadside stalls and family kitchens of the South - introducing new dishes alongside favourites from Thailand’s deepest southern provinces.
